Cooking utility cost
The energy, water and disposable frying oil a dish consumes while being cooked. Small per meal ($0.02-0.60), material per month, and the reason a 3-hour broth is not as cheap as its ingredient list suggests.
What it includes
Four components, all measurable:
- Gas or electricity β the burner or oven, priced per kWh at your national residential tariff.
- Water β mainly boiling and blanching water that gets poured away, plus washing.
- Frying oil β not the oil absorbed by the food (that is an ingredient) but the litre or more you heat, use once and discard.
- Disposal β where used oil must be handed in or collected, that fee belongs here too.
Why it is usually ignored, and why that is wrong
Almost every recipe cost calculator stops at ingredients, because utilities are small per meal. But "small" is doing a lot of work. Ranges from our data set:

Deep frying and long simmering are where it stops being a rounding error. A tonkotsu broth simmered three hours can carry more utility cost than the pork bones did.
The country multiplier
Energy prices differ by a factor of roughly six across the countries we cover, so the same oven bake is a different expense depending on where you stand:
- Electricity per kWh: AU $0.32, ES 0.27 EUR, GB 0.27 GBP, CA $0.18, US $0.16, KR 130 won, MX 2.00 MXN
- Gas is generally 3-5x cheaper per kWh than electricity, which is why gas hobs still win on running cost almost everywhere.
This is why a cross-country dish comparison that only prices ingredients gets the ranking wrong for anything baked or simmered.
The formula we use
Utility cost = (electricity kWh/min Γ minutes Γ electricity tariff) + (gas kWh/min Γ minutes Γ gas tariff) + (water litres Γ water tariff) + (oil litres Γ disposal cost)
Each cooking method carries its own per-minute energy draw, water use and oil volume; the country supplies the four tariffs. Nothing here is guessed at the meal level β it is method Γ time Γ local price.
What to do with the number
- Batch cooking pays twice. One 45-minute oven session producing six portions costs a sixth per portion of six separate sessions.
- Lids are free money. Boiling with a lid on cuts the energy for that step by roughly 25-30%.
- Reuse frying oil properly. Straining and reusing frying oil three times cuts the per-meal oil cost by two thirds, and is the single largest utility saving available at home.
- Do not switch a dish over $0.05. For most 15-20 minute meals, utility cost is not the variable to optimise β ingredient choice and waste are 10-50x larger.
